Allyl sulfinates are much more stables and bioavailable then allicin, which is very unstable substance. The sensitive bacteria are, for example, E.Coli, Salmonella sp., Clostridium perfringens, Staphylococcus aureus, Streptococcus sp., Pseudomonas aeruginosa, Klebsiella pneumoniae, Enterococcus faecium or Camphylobacter sp. Moreover, allyl sulfinates destroy others pathogenic microorganisms also, such as Mycoplasma sp., fungi (Candida sp., Trichophyton sp., Microsporum sp., Cryptococcus sp.) and parasites (Cryptosporidium parvum, Entamoeba histolytica, Giardia lamblia or Leishmania sp.). Allyl sulfinates do not destroy the natural gut microflora, such as Lactobacillus sp. The mechanism of selective action results from the fact that allyl sulfinates do not destroy the cell nuclei of pathogenic microorganisms but they act on cell walls. Pathogenic and non-pathogenic microorganisms cell walls differ in their structure. The same mechanism explain why the microorganisms have not become immune to allyl sulfinates for thousands of years. Allyl sulfinates destroy cell walls of pathogenic microorganisms and inhibit the action of cell enzymes. The cell destruction results from the lysis principle – the cell contents are extracted to the surroundings area. In such a process, the substance causing cell disintegration is not recognized by the nucleus. It makes the immunisation of microorganisms against allyl sulfinates impossible. ACTION AGAINST MYOCARDIAL INFARCTION Allyl sulfinates cause relaxation of vascular smooth muscles, which, in effect, lowers blood pressure. They inhibit synthesis of cholesterol, platelet aggregation and thrombosis. They protect against sudden cardiac death. IMMUNITY STIMULATION Garlic originated substances improve the quantity and activity of cells and substances taking part in organism defence processes such as leukocytes (including granulocytes, monocytes, lymphocytes), natural killer cells, macrophages, lysozyme and immunoglobulins. They inhibit the action of enzymes (lipoxygenase and cyclooxygenase), taking part in the synthesis of inflammatory mediators (prostaglandins and thromboxanes). Additionally, garlic reduces also the activity of another important inflammatory mediator - tnf-alpha factor (by 41% - demonstarted in studies) and  pro-inflammatory cytokines (IL-1, IL-2, IL-6, IL-8 or IFN-gamma). At the same time garlic stimulates the production of anti-inflammatory interleukin-10.
